Aamras: The Royal Mango Indulgence of Indian Summers

Aamras-Recipe

Aamras-RecipeThere are few pleasures as comforting and nostalgic as a chilled bowl of aamras on a warm summer afternoon. Silky, fragrant, and naturally sweet, this beloved Indian delicacy transforms ripe mangoes into a luxurious treat that pairs beautifully with hot puris or can simply be enjoyed as a refreshing drink. The secret to truly exceptional aamras lies in choosing rich, non-fibrous mangoes like Alphonso or Kesar, known for their deep flavour and velvety texture.

Ingredients

  • 4–5 ripe Alphonso or Kesar mangoes
  • Sugar, as required (optional)
  • ¼ tsp cardamom powder
  • A few saffron strands
  • Chilled water, as needed
  • Ice cubes
  • Chopped almonds or pistachios (optional)

Method

Begin by washing the mangoes thoroughly under running water to remove any impurities. Peel off the skin carefully and slice away the luscious pulp, discarding the seed. Transfer the mango pulp into a blender jar.

If the mangoes are slightly tangy or less sweet, add a little sugar according to taste. Sprinkle in the cardamom powder, which lends a delicate aroma, and add a few saffron strands to enhance the richness and colour of the aamras.

Blend the mixture until it turns smooth, creamy, and completely lump-free. Gradually add chilled water, little by little, depending on the consistency you prefer. Traditionally, aamras is kept thick and velvety, but it can also be made slightly thinner for a drink-like texture.

Blend once again for a silky finish. Refrigerate the aamras for some time before serving, as it tastes best when perfectly chilled.

Serving Style

Pour the chilled aamras into elegant bowls or tall glasses. Garnish with finely chopped almonds or pistachios for a royal touch. Serve it cold alongside hot puris for an authentic traditional experience, or enjoy it on its own as a refreshing summer beverage.

Pro Tips for Perfect Aamras

  • Always choose naturally sweet, juicy, and non-fibrous mango varieties for a smooth restaurant-style texture.
  • Do not add excess water, as authentic aamras is meant to be rich, thick, and full of flavour.
  • Chilling the aamras before serving enhances both the taste and aroma beautifully.
