Vada Pav: Mumbai’s Iconic Street-Style Comfort Bite

Vada Pav: Mumbai’s Iconic Street-Style Comfort Bite

Few street foods carry the charm, nostalgia, and cult following of Mumbai’s legendary vada pav. Crispy on the outside, soft and spicy on the inside, this humble yet flavour-packed creation is more than just a snack, it is an emotion served between buttery pav. The secret to an authentic roadside-style vada pav lies in the balance of textures, fiery chutneys, and that unmistakable aroma of hing and curry leaves sizzling in hot oil.

Preparing the Batata Vada Filling

Begin by boiling 4–5 potatoes until perfectly tender. Peel and mash them smoothly, ensuring there are no large lumps.

Heat 2 tablespoons oil in a pan and add 1 teaspoon mustard seeds. Allow them to crackle beautifully, releasing their nutty aroma. Add a pinch of hing (asafoetida), an essential ingredient that gives the potato mixture its authentic Mumbai roadside flavour and signature fragrance.

Next, add fresh curry leaves, 2 finely chopped green chilies, and 1 teaspoon ginger-garlic paste. Sauté lightly until aromatic. Sprinkle in ½ teaspoon turmeric powder and stir briefly to enhance the colour and warmth of the filling.

Add the mashed potatoes along with salt according to taste. Mix everything thoroughly so the spices coat the potatoes evenly. Finish with freshly chopped coriander leaves and a squeeze of lemon juice for freshness and balance.

Allow the mixture to cool slightly before shaping it into medium-sized round balls.

Preparing the Besan Batter

In a mixing bowl, combine 2 cups besan (gram flour) with salt, ½ teaspoon turmeric powder, ½ teaspoon red chili powder, and a pinch of baking soda.

Gradually pour in water while whisking continuously to create a smooth, lump-free batter. The consistency should be medium-thick — enough to coat the potato balls generously without dripping excessively.

Frying the Vada

Heat sufficient oil in a deep kadai for frying. Once the oil is hot, dip each potato ball into the besan batter, coating it evenly.

Carefully slide the coated vadas into the hot oil and deep fry until they turn beautifully crisp and golden brown from all sides. Remove onto absorbent paper to drain excess oil.

Dry Garlic Chutney

For the signature spicy chutney, dry roast garlic, dry coconut, peanuts, red chili powder, and salt in a pan until aromatic. Allow the mixture to cool slightly before grinding it into a coarse, flavourful chutney that adds the soul to every bite of vada pav.

Fresh Green Chutney

Blend together fresh coriander, mint leaves, green chilies, ginger, lemon juice, roasted cumin, rock salt, and a little water until smooth.

A few drops of chilled water or even an ice cube while blending will help maintain the chutney’s vibrant green colour. Adding a pinch of black salt gives it an extra chatpata punch.

Slice the pav gently through the centre without separating it completely. Spread a generous layer of green chutney inside and sprinkle the dry garlic chutney generously.

Place the piping hot batata vada in the centre, gently press the pav together, and serve immediately with fried green chilies on the side for the ultimate Mumbai street-food experience.
